Moosewood Restaurant Favorites

- What --- We'll feature our favorites recipes from the Moosewood Restaurant located in downtown Ithaca, NY. Moosewood, Inc. was founded in 1973 with an emphasis on healthful natural food cuisine. Here's an except from the Moosewood website: "Moosewood, Inc. is a collectively owned business with nineteen members who share responsibilities and participate in the various jobs necessary to run what has grown from a very small natural foods restaurant to become a larger and more diversified company. Moosewood Restaurant has been acclaimed as a driving force in the world of creative vegetarian cooking. Moosewood was named one of the thirteen most influential restaurants of the 20th Century by Bon Appetit magazine."
The following recipes will be featured in our next class:
1. Buddha's Jewels
...an appetizer of tofu dumplings made with crunchy fresh veggies served with a sweet-sour sauce
2. Fresh Greens with Moosewood's L.D.'s "House Green Dressing"
3. Savannah Beans and Greens Soup...a winter menu favorite
4. Seitan Reuben...a favorite of our Saturday lunch crowd and served open face and broiled
5. Swiss Chard Rolls...two versions: 1) Mushroom 2) Cheese
6. Caribbean Stew...a tropical aroma served with brown rice
- Whom --- Debbie Staehler and Blaine Tornow will prepare selections from the Moosewood series of cookbooks. Debbie is a part-time Chef at Downtown Grocery and Blaine is the store co-owner and a devoted foodie. Debbie and Blaine also menu plan all of the prepared food options at Downtown Grocery.
Debbie Staehler grew up in food service. Her family owned a supper club near Eau Claire where Debbie was involved in many aspects of the kitchen and customer service. Debbie holds a BS in Dietitics from UW-Stout with a Minor in Sociology. She has 14 years of experience at Sodexho/Marriot serving as the Kichen Manager planning and managing Breakfasts, Lunches and Special Events for 800-1100 people. Debbie has an energetic, warm and social approach in sharing knowledge and ideas about tasty and healthful food! Debbie also co-taught with Blaine a class at Grebe's in 2007 called "Organic Delights."
Blaine Tornow grew up around food, too! His father owned Tornow Grocery store (now the Rib Mountain IGA) and Blaine worked in all departments! Blaine also owns MoonShadow Farm, a MOSA Certified Organic Farm, located west of Wausau. Blaine is a devoted foodie, a vegetarian and attends cooking classes, including a raw vegan weekend class at Ecopolitan in Minneapolis, and a Chinese Cooking Class taught by Wing See at NTC. Blaine also co-taught with Debbie the Organic Delights class at Grebe's in 2007. Blaine has a detailed and energetic approach towards preparing good food!
